A stainless steel mesh ‘basket’, which can be filled with your gin botanicals and hung from an the internal bar at the top of the Pure Distilling Pot Condenser.
Vapour distillation
Gin baskets allow botanicals to be suspended in the vapour path of your gin distillation creating a ‘Vapour Distillation’.
This method allows delicate botanicals, that don’t require or benefit from being boiled in the still, to be suspended above the boiler. During distillation, your gin vapour travels through the botanicals in the basket and extracts their flavour more gently than boiling them in the pot. Botanicals that can benefit most from vapour distillation are citrus, florals, herbs and any fresh plant material. However, all botanicals can be vapour distilled.
Some distilleries, for example Bombay Sapphire, believe that vapour distilling alone is the best way to make gin.
At dSTIL Project we use a combination of the two — boil and vapour depending on the botanical.
