Angelica archangelica
Legend states that angelica was gifted to the world by the Archangel Gabriel. All parts of the plant can be used, but it’s the root that is included in many gin recipes and is essential in London Dry styles. Angelica used for its ‘fixative’ (flavour binding) properties and its warm herbal, fresh yet earthy flavour.
